Our wines
Eco-sustainability, suitability and bio-methods of management are the strategies chosen by our farm.
The estate enjoys an ideal location about 350 feet above sea level. It is located near the Nature Reserve of the Salt Pans of Trapani, 2 km far from the western coast of Sicily, in the landscape of the Egadi Islands and Mount Erice.
A unique terroir characterised by constant winds blows and breezes that significantly mitigate the climate in summer, with temperature ranges between day and night, favouring the optimal ripening of the grapes.
Thanks to the type of soil and specific wine-making methods we have obtained wines rich in personality with unique and distinguishing features. The type of soil becomes the most important agronomic leverage for producing our white wine ("Kétos") and the red one ("Rocca del Drago"), according to the disciplinary code provided for by “IGT Sicilia”.
Kéthos
The mythological name dates back to the Greek civilization in Sicily, when it was believed that a water deity was living in the Mediterranenan sea to protect the Sailors. It was often depicted in various forms on Greek vases and ancient nautical maps of Trapani. The label portrays a seventeenth-century coral amulet belonging to the owner's private collection. It was tradition offering it to the first-born son, in aristocratic families, as a good luck charm. It is an extraordinary fresh and fragrant wine with pronounced varietal characteristics from a “blend” of Grillo and Zibibbo grapes. You can perceive an intense and luscious fragrance with hint of roses, orange blossoms, lemon and jasmine; fresh, round, elegant, just slightly sweet because of the presence of the Zibibbo but with a touch of savoury taste given by the Grillo. A brilliant and versatile wine, excellent as aperitifs, starters and courses with fish and shellfish. Alcoholic strenght: 12,5 %
Rocca del Drago
Take its name from a rock located close to our vineyard. On the label the small wooden sculpture represents the Archangel Michael slaying the Dragon. A work of the seventeenth-century's local craftsmanship, it belongs to the owner's private collection. It's a “blend” of Nero d’Avola and Syrah grapes, ruby-red coloured with purplish tinges, pronounced and elegant wine. Fruity with hints of berries, soft and fresh, pleasantly tannic, well-balanced and impressive flavour. A happy meeting between two vine varieties having their history tied to Sicily. The certainly indigenous Nero d'Avola meets the Syrah grape, which has its historical roots in the East and in the sicilian territory of Siracusa, until it arrives in France, in the Rhone Valley, where it has spread all over the world for its adaptability to different soil and climatic conditions. A sicilian wine, with an international soul. Alcoholic strenght: 13,5%

An innovative dryland farming technique applied to the “minimum tillage” olive groves favors the natural physiology of the Mediterranean olive tree. Pruning technique respects the potential vigour of the plants with minimal interventations aimed only at supporting the production rhythm of the olive grove. Pest control is exclusively carried out with natural remedies. Cold-milling process takes place within 12 hours after harvesting to ensure freshness and fragrance of the extracted oil that so maintains its original nature and exceptional quality. The oil obtained is stored in highly hygienic steel containers and subject to natural settling at controlled temperature.
